Brett - you can use that kit if you still use a strap. This kit doesn't keep the fork from extending to full length on launch - it is a spring that has a really soft spring rate for part of it. It just collapses that part of the spring to set lower - so you still have to use a strap to contol how much it rises on launch.
Done them on a few harleys, they are good for a quicker and cheaper way to lower the front, all your doing is essentially replacing the spacer with a very soft spring. When the fork is assembled and on a bench it is stock length, with little weight on it, the soft spring fully compresses becoming solid. Wouldn't really be bad at the track I don't think as long as you still strap it. I'm guessing with the different spring you wouldn't have to much of an issue with bottoming out.
I just took mine apart and cut the factory spacers and made some longer ones for the otherside of the spring. Lowers it and limits travel as long as you do both spacers. Works great. There is a pretty good write up about it over on hayabusa.org
