Based upon the performance of todays bikes, the old CB's are snails. They still are easy and cheap bikes to build for cruising though and look great when you combine the new with the old.
I built my CB750F SS just for bracket racing. I've had more fun and won more $$ with that bike than any other that i own. Its not the fastest but it is fairly consistent. I'm in the process of building a street CB now using a mono shock Katana 600 arm, Busa wheels and a GSXR 1100 oil cooled frontend.
I'll try to post some pics of the build below if they aren't to big. Will post a pic of my bracket bike too- its the one in my avatar.

Ok the 1979 and up CB750's are a different animal than the 78 and down CB's. In 1979, Honda redesigned the motor and came up with a double over head cam design versus the single cam used from 1969-78. The internal were different as well. The DOHC were quicker but still were prone to weak links like the clutch basket and the connecting rods when put under dragracing pressure. There are still some hi po parts available for the DOHC Honda's. All of the DOHC motors from the 750 to the 1100F were of similar design. You could swap in a motor from a CB1100F into that frame and put an 1123 kit in it for more power. Again, these motors did have failures when pushed to the limit but were otherwise some of the most reliable plain bearing crank motors around, in my opinion.
John Sands out of Columbia.SC had the worlds fastest Honda CB1100F dragbike at one point.
All i can say is if you have a love for the CB's like i do, go for it but don't expect it to whoop up on a Busa or ZX14 in a heads up race.

heres my old cb 900 the fender is now black to match paint hae to get some update pics.. but it runs very well for what it is and is sinple and reliable..i use it for my street bike

good luck on that i havent seen one anywhere ..
ive just got real stiff springs in mine and thats it.. it does good but yet im 200 cc under u yet another reason im swaping over to kz engine on my chassis this coming up winter..

watercooled gsxr is what they fit.. have to take old boots off get u some radiator hose the right side think it was 2 1/4 and cut them all at a angle so there straight where the carbs go then do some fighting and they will go .... i actually tried oilcooled carbs as well as there spaced closer together they looked like they wold have worked better but i was wrong... watercooled spacing is just about right..
also took some thin pipe and inserted it in the hose so it wouldnt flex when the motor sucked in.. its actually real simple and easy to do ...

That might be a tough one. did you try MTC yet?
Cycle X just starting making lockups for the SOHC motor- not sure if they will do one for the DOHC.
